Aging bananas nearly always mean banana bread in our house but this time I wanted cupcakes.
And instead of my usual compulsive baking-from-scratch, I explored the get-a-little-help area: a yellow cake mix.
Googling “recipe cake mix bananas” brought lots of results, with Kraft coming in with the winning recipe. A nut allergy kept me from following through on the cream cheese and walnut frosting but I thought it sounded delicious!
Tweaks: 1) I left out the oil called for in the cake recipe – when there’s fruit, like applesauce or bananas, I nearly always skip the added oil. 2) I made cupcakes instead of a layer cake. 3) I replaced the frosting with a glaze made of powdered sugar, half and half, and vanilla.
Excellent results! Most of the cupcakes went to the student veteran center on campus, but B ate five and asked me to make them again. 🙂
